Dr. Jamie I. Baum is an Associate Professor in the Department of Food Science and is the Director of the Center for Human Nutrition at the University of Arkansas. Dr. Baum received her BS in Dietetics (2000) and her PhD in Nutritional Science (2004) from University of Illinois at Urbana-Champaign. She completed a postdoctoral fellowship in Cellular & Molecular Physiology at Penn State College of Medicine in Hershey, PA in 2006. Dr. Baum worked as a nutrition scientist in food industry in The Netherlands for before moving to the University of Arkansas in 2011. Dr. Baum’s research addresses challenges related to dietary protein, skeletal muscle, and disease across the lifespan and has been funded by NIH, USDA, and several commodity boards. The students she has mentored have been well-recognized for their research, receiving awards from both the American Society for Nutrition and the Institute of Food Technologists. Her expertise in dietary protein she has been featured in popular press magazines such as Prevention, Consumer Reports, Eating Well, and AARP. Dr. Baum recently launched a monthly nutrition and physical activity radio program (Balance) on her local npr station (KUAF). In her spare time, Dr. Baum likes to read, travel, and cook.
