I am a Research Fellow at the University of Surrey (School of Biosciences) and a registered dietitian. My research focus is on the use of food in the prevention and management of disease. I have over 10 years’ experience conducting human trials; this began during my PhD with the study of coffee’s chronic effects on glucose and lipid metabolism. Subsequently, I have studied the effects of different processing methods on resistant starch formation in the potato, and its effects on glucose and lipid metabolism in both healthy participants (BBSRC grant BB/N021274/1) and most recently those with Type 2 Diabetes (funded by the Alliance for Potato Research and Education). These projects used stable isotopes to investigate the underlying glucose kinetics. My current work (BBSRC grant BB/X020029/1) is investigating the ability of gene-edited tomatoes to improve vitamin D status; this is in collaboration with the John Innes Centre (UK) and the Quadram Institute (UK).
