Miss Huang is a researcher specializing in the structural characterization and biological activity of fermentation products derived from polysaccharides and probiotics. Her research focuses on elucidating the molecular mechanisms through which probiotic fermentation modifies natural polysaccharides and enhances their functional properties, such as immunomodulation and gut microbiota regulation. She has contributed to a deeper understanding of the interactions between these bioactive compounds and host physiology, aiming to support the development of novel functional foods and therapeutic agents. Her recent projects involve investigating the bifidogenic properties of polysaccharides isolated from the mushroom Lentinula edodes and the enhancement of immunostimulatory activities through Bifidobacterium fermentation.
