Zhuo Chen is an M.S. candidate in Nutrition Science at the University of Minnesota with a background in mechanical engineering from Georgia Tech. His research focuses on phosphorus bioaccessibility in alternative proteins like cricket powder, aiming to inform dietary strategies for chronic kidney disease. Zhuo is especially interested in the intersections of nutrition, neuroscience, and exercise science, and how they influence metabolic health.
Beyond the lab, Zhuo is passionate about improving the food system and advancing nutrition education through a public health lens. He has served as a teaching assistant in nutrition, physiology, and statistics, and has presented research at Nutrition 2025 and the CFANS Research Symposium. Through interdisciplinary training and public engagement, Zhuo is committed to translating science into meaningful health solutions.
