Dr. Lisa Jansen is an Assistant Professor in the Department of Dietetics & Nutrition at the University of Arkansas for Medical Sciences and Associate Director of the Maternal and Early Nutrition for Optimal Growth and Development (MEND) Core at the Arkansas Children’s Nutrition Center. Her research bridges maternal nutrition, hydration science, and metabolic health, with a focus on behavioral and physiological factors that influence pregnancy outcomes. Dr. Jansen leads federally funded studies on glucose regulation, health behavior modification, hydration, and mood in pregnancy, and is passionate about translating research into practical strategies for pregnant women and their care teams.
