Vanessa is a second-year PhD student in the Nutrition Department at Texas Woman's University in Houston, TX. She gained her master’s degree from the University of Minnesota Twin Cities in 2015 and worked as a certified clinical research professional for 9 years, before returning to school in 2023. She is currently part of a research team conducting a meta-analysis examining the nutrient composition of preterm human milk with a goal of understanding how maternal and infant factors influence milk quality and support optimal preterm infant health. She is also currently leading a pilot clinical trial investigating the effects of resistant starch supplementation on glucose metabolism in women with polycystic ovary syndrome (PCOS). This human intervention study is designed to inform her dissertation research and explores the potential metabolic benefits of dietary fibers in this population.
