Dr. Dufault completed her doctorate degree at A.T. Still University. She retired early from her position as a US Public Health Service officer at the Food and Drug Administration (FDA) to publish her findings of mercury in high fructose corn syrup and the first ever nutritional epigenetics model describing the role dietary factors play in the development of autism and attention deficit/hyperactivity disorders. Nutritional epigenetics is the field of research where scientists study the effects of nutrients and dietary chemicals on gene expression. In 2010, Dr. Dufault co-founded the non-profit Food Ingredient and Health Research Institute where she serves as the volunteer Executive Director and Principal Investigator. Dr. Dufault and her collaborators have conducted several investigations to determine the impact of heavy metals in the ultra-processed food supply on human health and development. Dr. D is now considered a world leader in the field of nutritional epigenetics. In 2024, she was elected by the American Society of Nutrition (ASN) to serve as the Chair-Elect for ASN’s Nutrient-Gene Interactions RIS (research interest section). Dr. Dufault is the author of two books which are used in conjunction as curriculum to teach the subject of nutritional epigenetics. The curriculum has been used successfully in three clinical trials as part of a nutrition intervention to change dietary behaviors and improve health.
