Cole Patoine, MS, RDN, is a Ph.D. candidate in Human Nutrition at Florida State University, where he also serves as a research assistant in the College of Medicine and a teaching assistant in the Department of Health, Nutrition and Food Sciences. As a registered dietitian (since 2021) with prior clinical experience in endocrinology, Cole focuses on translational research at the intersection of nutrition, the gut microbiome, and chronic disease prevention. He has led and contributed to several clinical trials examining the effects of dietary components—such as watermelon, lentils, chickpeas, and peanut butter—on gut and metabolic health across diverse populations, including children and adults with obesity. His work has resulted in multiple peer-reviewed publications and over $500,000 in research funding. Cole is the recipient of the Academy of Nutrition and Dietetics Emerging Researcher Award for 2025.
