Yuyi (Amber) Chen is a PhD candidate in Nutritional Biology at the University of California, Davis (expected 2029), where she investigates zinc absorption and metabolism along with polyphenols in human nutrition under Drs. Holt and Hall’s Lab. A graduate of the Johns Hopkins Bloomberg School of Public Health’s MSPH-Dietitian Program, she earned the Harry D. Kruse Publication Award for her research on folate and vitamin B12 distribution in low-income U.S. children, published in Precis Nutrition (2024). Her work spans clinical, community, and public health domains, including maternal health disparities research at Johns Hopkins Medicine, DASH-Sodium trial operations, and analyses of dietary ketogenic ratios’ impacts on glaucoma risk using NHANES data. Chen has presented findings at major conferences like NUTRITION 2024 and authored a systematic review on nitric oxide optimization strategies (SM Journal of Nutrition and Metabolism, 2023). Beyond research, she founded the Emory International Pre-health Organization to support 200+ international students, led nutrition communication initiatives reaching 10,000+ followers, and developed clinical expertise through roles at Johns Hopkins Bayview Medical Center and sports nutrition clinics. Fluent in Mandarin and English with advanced R programming skills, she integrates biostatistics with public health practice to address nutritional disparities.
