Rachel Zimmerman is a registered dietitian and global nutrition researcher. Zimmerman serves as a Research Coordinator with the E3 Nutrition Lab under Dr. Lora Iannotti, supporting transdisciplinary research with local partners in Ecuador to test innovative approaches to achieving sustainable, healthy dietary patterns that improve young child growth and brain development. Her work includes coordinating and supporting studies and community-based interventions, most notably the Mikhuna Project, a randomized controlled trial in peri-urban Ecuador focused on improving maternal and fetal health. Zimmerman is especially interested in solutions that combat the growing issue of global food supply homogenization and its consequences including lower dietary diversity, weakened local food systems, and poorer nutrition outcomes in vulnerable populations.
Zimmerman also serves as the coordinator for the Nutrition Research Incubator within the Washington University - Center for Diabetes Translational Research, advancing interdisciplinary collaborations and the development of innovative nutrition research. She completed a Masters in Public Health at Washington University in St. Louis and has been recognized by WashU as an Emerging Leader in Health Equity and a Shanti K. and Manorama Khinduka Fellow for her work in global nutrition research.
