Dr. Guoxun Chen is a professor in the College of Food Science and Technology at Huazhong Agricultural Unversity, Wuhan, China. He obtained his BS and MS degrees of Virology and Molecular Biology from Wuhan University, Wuhan, China. He completed his Ph.D degree of Biochemistry and Molecular Biology in the Department of Biochemistry and Molecular Biology, and his postdoctoral training in the lab of Drs. Michael Brown and Joseph Goldstein in the Department of Molecular Genetics at the University of Texas Southwestern Medical Center at Dallas, Texas, US. Dr. Chen became a faculty member at the University of Tennessee, Knoxville in 2006 and retired as a tenured associate professor in 2022. Dr. Chen has been conducting research projects related to obesity and diabetes since 1995. Since 2006, Dr. Chen has focused on the roles of vitamin A in the development of metabolic diseases such as obesity and type 2 diabetes, and regulation of glucose and lipid homeostasis. He has also been investigating bioactive compounds using cell and animal models. Currently, Dr. Chen serves as the Editor-in-chief of Food, Nutrition and Health, a journal serving as a platform to integrate scientific discovries in food and nutrition sceinces regarding human and animal health.
