Tatum Walker is an undergraduate researcher in the Department of Nutritional Sciences at Texas Tech University, where she is pursuing a degree in Nutritional Sciences and Dietetics. Under the mentorship of Dr. Naima Moustaid-Moussa and Dr. Yujiao Zu, her research focuses on developing novel prebiotic nanoparticles designed to enhance the absorption of anthocyanins from tart cherry juice, to improve nutrient bioavailability and health outcomes. Tatum has contributed to several peer-reviewed abstracts and publications, including work presented at the ASN Nutrition 2025 conference and published in Current Developments in Nutrition and Circulation. She has been recognized with the Lubbock Economic Development Alliance Outstanding Impact Award (Health, 2nd place) and the Outstanding Commercialization Award for her innovative research on NutraCherry. In addition to her academic and research achievements, Tatum is actively engaged in community service and student organizations. She was also a member of the USDA REEU Nutrition Bench-to-Community Engaged Scholars in Texas (Nutrition BEST) program, where she expanded her experience in translational nutrition research and public engagement. Tatum is very passionate about research and strives to continue working in this important field.
