Clay Swackhamer is a research associate at Oregon State University working in the laboratory of Dr. Dave Dallas. He was previously a USDA-NIFA postdoctoral fellow at Purdue working in the Whistler Center for Carbohydrate Research under Dr. Bruce Hamaker studying the effect of modified arabinoxylans on the gut microbiome. He did his graduate work in the Department of Biological and Agricultural Engineering at UC Davis under Dr. Gail Bornhorst, working on in vitro models of gastric and intestinal digestion an the breakdown of model foods in these systems.
