Esi Quaidoo, MPhil, RDN, LDN, is a doctoral candidate in Public Health at the University of Massachusetts Amherst, with a concentration in nutritional epidemiology. Her research explores the intersection of dietary patterns, chronic stress, and body composition, with a focus on improving cardiometabolic health outcomes across diverse populations. Esi’s current work includes examining hair cortisol concentration as a biomarker of chronic stress among college students and evaluating community-based nutrition programs targeting older adults. A registered dietitian with clinical and research experience in both the U.S. and Ghana, she is passionate about advancing equitable, evidence-based approaches to improving dietary habits and wellness across different populations.
