Sarah Kate Walsh is a final-year PhD candidate at the School of Food and Nutritional Sciences and APC Microbiome Ireland, University College Cork. Her research focuses on the role of dietary fiber in food reformulation and its effects on physiology, the gut microbiome, and consumer acceptance. She coordinated The Fiber Full Study (ClinicalTrials.gov ID NCT06416254), a randomized controlled dietary intervention investigating the impact of substituting digestible carbohydrates with isolated fibers on glycemia, energy intake, satiety, and the gut microbiome. Her research is funded by Research Ireland and supervised by Dr Alice Lucey and Professor Jens Walter. Sarah is passionate about science communication and is actively involved in public engagement activities to promote evidence-based nutrition.
