Dr. Nathaniel Johnson is an Assistant Professor in Nutrition and Dietetics at the University of North Dakota. He earned his Ph.D. in Nutrition and Exercise Sciences, with research focusing on protein intake and muscle health. His expertise spans research methods, nutritional biochemistry, and rural food accessibility. Dr. Johnson has conducted a diverse range of studies, including clinical trials, human cohort studies, and benchwork projects utilizing advanced laboratory techniques. His research primarily explores dietary intake, food access, and disability, with notable findings on protein intake, muscle quality, and mental health. Drawn to the field of Nutrition as the result of an illness affecting his ability to digest and absorb food, he also is a founder of the Disability Affinity Network for Employees, a support group advocating for equity in academia. In his free time, he loves to cook, watch sports, play with his dogs, and spend time with his family.
